"The original recipe called for kangaroo, so if you like kangaroo and have access to it, just sub it for the lamb. Can be stuffed into sausage casings or made into patties."

Step by Step Method

Step 1

In a medium saucepan, stir together the onion, garlic, soy sauce, tomato paste, mustard, chili powder, brown sugar, ginger and vinegar. Bring to a boil and simmer 1-2 minutes. Cool completely.

Step 2

When mixture has cooled completely, mix it into the lamb in a large bowl. Add breadcrumbs, salt and pepper and mix thoroughly.

Step 3

Let sit at room temperature for 20 minutes or cover and refrigerate overnight.

Step 4

Stuff into soaked casings, or form into patties.

Step 5

Grill or fry using your favorite method.

Gads...I am right out of kangaroo! Awesome sausages! I only had 1lb of ground lamb but used the full amount of the spices and 3/4 cup fresh sourdough bread crumbs! I got four patties and intended to have 2 for another meal for us, but...we ate 2 each because they were just too hard to refuse! Thanks Mike for sharing a recipe that I will be keeping and making a lot.
