  • For best results, use fresh garlic instead of pre-minced garlic.
  • Use a good quality tequila to get the best flavor out of the marinade.

  • Substitute Coconut Milk for Tequila: This substitution will give the marinade a more subtle sweetness and a creamy texture. It will also make the marinade more suitable for those who do not consume alcohol.
  • Substitute Orange Juice for Lime Juice: This substitution will provide a more subtle citrus flavor and sweetness to the marinade. It will also make the marinade more suitable for those who do not like the tartness of lime juice.

Jalapeno Tequila Marinade Replace the ground cumin with 2 tablespoons of chopped jalapenos and increase the tequila to 1 cup.

Chipotle Lime Marinade Replace the ground cumin with 2 tablespoons of chopped chipotle peppers and increase the lime juice to 1 cup.

Mexican Rice: Mexican rice is a great accompaniment to the Arrachera Beef. It is a flavorful side dish that is simple to make and pairs well with the marinade. The rice is cooked with garlic, onion, and tomato for a delicious flavor that pairs perfectly with the beef.

Refried Beans: Refried beans are a classic accompaniment to the Arrachera Beef. They are easy to make and provide a creamy and savory flavor that pairs well with the marinade. Refried beans are a great source of protein and fiber, making them a nutritious and delicious side dish to serve with the beef.

This was very easy to prepare...I decreased the ingredients to marinade 1 pound of beef flank steak...I used the steak in your recipe prize winning chili...recipe # 1367...since that recipe called for chopping the steak...I chopped it before marinating...I plan on preparing this again and throwing it on the grill...thanks for sharing your recipe...

I wanted to make beef fajitas for my hubby and I and this looked so good I couldn't pass it up! The meat came out so tender after marinating it for about 18 hours. I will definitely be using this again when we want Mexican!
