"Altho this recipe found at the Krusteaz website was titled "Apple Ham Pancake Strata", it doesn't really fit the recipe type since a strata is always a layered dish. This dish would be better-named "Apple Ham & Pancake Breakfast Pudding" since it's so much like a bread pudding, so I renamed it. It's longer, but at least you know it's a mix everything together & bake kinda thing w/no complex assembly. The recipe was written to use the Krusteaz Gluten Free Buttermilk Pancake Mix product, but I changed it to use the Krusteaz Buttermilk Pancake Mix I can get here at Costco. The recipe stayed the same & the Gluten Free product can still be used to meet those dietary needs. The use of either product will produce an ideal outcome for a hungry family or brunch guests you want to impress. (Time does not include the 10 min resting time) ENJOY!"

Step 1

Preheat oven to 350F. Lightly grease an 8 x 8 x 2-in baking pan.

Step 2

Place pancake pieces, apples & ham in prepared pan. In a med bowl, whisk together eggs, half & half plus maple syrup. Pour over the apple, ham & pancake mixture in the pan.

Step 3

Bake 40-45 min or longer if a firmer pudding is desired. Let stand 10 min before serving. Brush w/melted butter, if desired ... But why would you ever decline such a great opportunity?
