Step by Step Method
Step 1
Wash and soak beans according to the directions on the package; drain and put them in a pot.
Step 2
Add enough water to cover the beans and cook for 30 minutes, adding more water if necessary.
Step 3
Reserve 2 1/2 cups of the water from the beans before draining.
Step 4
While the beans are cooking, saute the sausage until brown, add chopped onions, minced garlic cloves, celery and green pepper.
Step 5
Once tender, add the sausage/vegetable mixture to the beans along with 2 1/2 cups of reserved water.
Step 6
Add seasoning and simmer until tender.
Step 7
Serve over your favorite rice.

NOTE: To thicken remove 1 cup of the bean; mash and return to the pot.
