Ingredients

The ingredients are:
  • 2 cups dried Anasazi beans (soaked overnight)
  • 1 tablespoon oil (extra-virgin olive oil)
  • 1 onion, medium (chopped)
  • 1 green bell pepper, chopped
  • 2 garlic cloves, finely chopped
  • 2 celery ribs, sliced
  • 12 ounces sausage (kielbasa sausage, cut into 1/2-inch thick slices)
  • 1 teaspoon cajun seasoning (adjust to taste)
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon fine sea salt
  • 4 cups rice, cooked

How to Make

  • Step 1: Wash and soak beans according to the directions on the package; drain and put them in a pot.

  • Step 2: Add enough water to cover the beans and cook for 30 minutes, adding more water if necessary.

  • Step 3: Reserve 2 1/2 cups of the water from the beans before draining.

  • Step 4: While the beans are cooking, saute the sausage until brown, add chopped onions, minced garlic cloves, celery and green pepper.

  • Step 5: Once tender, add the sausage/vegetable mixture to the beans along with 2 1/2 cups of reserved water.

  • Step 6: Add seasoning and simmer until tender.

  • Step 7: Serve over your favorite rice.
