30 Minute Mini Meatloaves

Step 1

Heat oven to 350 degrees F.

Step 2

In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, onion, lemon juice, seasoning salt, and black pepper.

Step 3

Mix ingredients lightly with a fork. Don’t mash or the loaves will be dense. Divide the mixture into 6 portions, and shape each portion into a mini loaf on a sheet pan.

Step 4

Bake for 15 minutes.

Step 5

While the mini loaves are baking, make the glaze.

Step 6

In a small bowl, mix together the ketchup, brown sugar, mustard, cloves and allspice.

Step 7

After the mini loaves have baked for 15 minutes, brush some of the glaze on each loaf and return to the oven.

Step 8

Bake for another 15 minutes, or until cooked through.

These little loaves are just perfect for me since I am trying to lose weight. They are just the right amount for a single serving. Very tasty meatloaf recipe. It is quick and easy to put together so this is perfect for a busy weekday dinner. I made two loaves instead of the mini loaves and they were cooked in 45 minutes. Thx for sharing your recipe here.
