I'm posting early, because I just finished a dinner menu for one of the Ladies I cook for. A small dinner party tomorrow night.

Dinner: I took http://www.recipezazz.com/recipe/veal-s ... ppers-9125, and changed it a bit. I'm rolling up the veal and prosciutto around fresh spring asparagus; but, using the mushrooms and the sauce - just not the peppers. Serving it over lightly sauteed baby spinach with lemon, shallots, and olive oil.

Dessert: Mango granita, a recipe from finecooking. I will post it here; I have made it before, and it is very good. Probably topped with a few fresh raspberries

My dinner on Sunday is easy. A simple shrimp stir fry of some kind. I have snap peas, zucchini, broccoli, carrots, mushrooms, etc.; and fresh fruit. We'll come up with something.

Today is my niece's graduation open house, so we'll be grazing all afternoon. Potato salad, macaroni salad, chips and dip, veggie tray with dip, cheese and meat tray, cold cuts and cheese with dinner roll buns (I think...she might've decided to just pick up a huge Subway sub and cut it smaller), deviled eggs, sheet cake.

Should be an interesting day...my sister is doing it in her back yard, and my mother as well as my dad and stepmom will be there. Even though it's been almost 40 years, there's still some pretty spectacular tension between them.

Have fun ... sounds like a feast - but good luck. I know with my ex's family; there was never a get together without some kind of drama.
Grazing afternoon parties like that are always nice. I would be the first one to the deviled eggs, :)

I made a healthier version for condensed tomato soup. So I used it in my Cabbage Casserole. It was delicious, certainly brought down the sodium and the extra additives. So that was way good! I felt really good about serving dinner. We ate corn on the cob on the side. DH was very happy because it was his normal comfort food, and he didn't even miss the fat and sodium! :D

I made a cream of mushroom one also, (Substitute) so I will be using that tomorrow in some recipe! ;)

Morning!

Well, dinner is going to be 'Meatless Monday' all around!

Ladies #1 and #2: Vegetable Pasta primavera; fruit salad

Me: Grilled spicy bean quesadilla w/cheese; salad with avocado and oranges and poppyseed dressing.

These are a bit different, I'm using a can of Bush's Cantina spiced pinto beans. They are all preseasoned and ready to use - they are pretty good, but need a bit more. I'll add some OJ, chipotles, and a few onions to jazz them up. Spicier and bit of citrus flavor.
Trying not to do the typical salsa type of quesadilla. I may mix a little orange zest and cilantro w/the sour cream to top it off.

I had a plan, but it was vetoed. So now we're eating from the freezer, because I'm really kind of done with that. Most likely we'll end up with some #recipe7688 (although I made this batch with rice instead of stuffing).

2am, yes - that is morning; well, at work and waiting on a very LONG printing job. So, a little TV and computer time.

Felix, hope you had a nice time at the graduation party on Sat.

Lady #3: Pasta primavera; fruit salad
Me, I have a gallery opening to go to tonight. I thought it was last week; but, I had the wrong day - it's tonight. She's a good friend, and I know a few of the artists as well. They are having a few appies and wine. Should be fun.

So, I will finish off my shrimp stir fry from Sunday night as a late lunch; and enjoy a few appies at the gallery. I may even treat myself to a bowl of coffee ice cream when I get done; something I rarely do.

No cooking, except a quick Nuke for me today.
