What WAS on Your Plate & and WHAT'S for Dinner 8/8
Well, hot and soggy down here!
I know some areas have really had flooding issues; we have been relatively lucky. But, no grilling tonight.
Tonight ...
Ladies #1 and #2: Beef w/mushrooms, onions, marsala, herbs, and gravy in the crockpot - served over buttered noodles; iceberg salad w/blue cheese
Me: I had extra ground pork leftover from my burger the other night; so, rather than make it all Asian - I made 10 spicy Italian meatballs. So, spaghetti and meatballs tonight; either a salad of more fruit. I've been on a fruit kick lately.

Baker, love a good burger, but I could eat chicken everyday.
Which is why I'm making my herb roasted chicken breasts http://www.recipezazz.com/recipe/herb-r ... reast-5474, with fresh picked spaghetti squash with herbed butter, and fresh picked tomatoes.

The noodles are good. I'm actually doing that for me tomorrow. Sort of comfort food.
Spaghetti squash ... that is something I have to make more. I wish they came in a small size, lol. The ones here are like footballs; I can't even eat just a half in one sitting; but, I do love it.
NightB, as with lovin ... chicken any night of the week. I often pre-marinade my chicken. Add chicken pieces to a ziploc along with marinade. You can make your own, use a bottle; even a decent Italian dressing works.
It marinates when you first put it into the freezer; then, as it thaws it marinates again. Then, just grill. It's a quick short cut, when you don't have all day or night before to marinade.

6 russet potatoes
salt and pepper
1 cup shredded cheddar cheese
1 cup shredded Monterrey cheese
8 slices bacon
2 cups whole milk
2 eggs
parsley, to garnish (optional)
Directions To Follow:
Preheat oven to 375 degrees. Butter two 9-inch pie pans. Set aside.
Layer half of potato slices in the dish, overlapping slightly.
Season with salt and pepper.
Sprinkle cheeses on top of the potatoes and add the crumbled bacon pieces.
Add the other half of the potato slices on top of the cheese.
Mix together the milk and eggs. Pour half of the mixture over top of the potatoes.
Repeat the steps above for the second 9-inch pie pan.
Sprinkle the parsley on top
Cover with foil and bake for 90 minutes.
Allow the dish to rest for 15-20 minutes.
