Tonight will be Lemon Garlic Basil Chicken (recipe from a cookbook my sister just gave me), along with the leftover Sauteed Summer Squash (from F.com) and the rest of the Japanese Cucumber Salad (from the American Diabetes Association).

One of the reasons I most like making boiled beans and potatoes is that I can put in extra potatoes. Of course, we all know home fries come out best when using boiled potatoes. The extra potatoes from a couple of nights ago has given me several days of seasoned, ready to fry potatoes....EXCELLENT 8-) 8-) I have pulled a small streak out of the freezer. I'll cook that, fry potatoes with onions, and have the last of the green beans. Yogurt and fresh fruit for dessert.

Yum - love potatoes in any way ! I also like the nice soft texture of boiled beans. Now I usually eat them steamed and a bit crispy - but the nice soft beans cooked with some ham ... yum

I am on my own tonight - so I am having Old Bay Steamed shrimp, steamed asparagus and rice pilaf with herbs and butter.

Karen your meal sounds so wonderful!

My moms garden is doing so much better than mine. She gifted me a cauliflower, broccoli, onions, banana peppers, 3 yellow zucchini, cucumbers and a cabbage.
I made her Mom's Easy Chicken Hotdish. It has a bag of frozen veggies in it, but I used the cauliflower, broccoli, onions, peppers and zucchini instead. I just steamed them cut them into bite size pieces and OMG it was so delicious! My guys just raved about it. I changed it a bit since hubby on low sodium diet, but wow was this recipe wonderful with fresh veggies!

Morning and Happy Sunday!

Karen, I agree dinner sounds delicious! Anything with shrimp is good in my book.
And for beans, I love them steamed and crisp. But, slow cooked with ham or bacon is right up there as well.
And Deepster, yes, boiled potatoes make the best fried. I bought some duck fat from a local Amish market; and, just a touch of that in the pan makes the best fried spuds. I don't do it often ... but, it is a nice treat.

Today's cooking ...

Lady #3: Asian chicken salad. Mixed greens, sesame grilled chicken, bean sprouts, snow peas, carrots, water chestnuts, crunchy chow mein noodles, and http://www.recipezazz.com/recipe/sweet- ... ssing-4668; fruit salad (I'll drop that off around 2pm)

No idea yet for dinner, thinking of chili and cornbread. Having French Toast with a poached egg for breakfast and some blueberries.

Going to the Museum at the Rhode Island School of Design today and then shopping at some pottery and antique stores of Wickendon Street. If the weather holds we will go over to India Point Park on the waterfront and check out the food trucks for lunch.

If I get back to late to make chili - then maybe just grilled cheese and soup tonight.

On my own for both lunch and dinner today, so I'm combining the two. French toast with real maple syrup, smoky links, and Asian Honey Soy Glazed Watermelon (from the National Watermelon Promotion Board), which are supposed to be watermelon balls on skewers but which I'm doing as chunks in a bowl instead since I don't own a melon baller.

We just ate leftovers. I had leftover skillet breakfast with fried taters, sausage and eggs, leftover spaghetti, and leftover casserole. I had spaghetti. It was still delicious, but I love spaghetti! ;) I had my moms veggie, chicken casserole for lunch. Probably will eat that again for lunch. Thinking chili tomorrow, but also have that bag of dried lentils staring at me....Hmmmmm

Dis ... I love those nights. I usually have them on Friday w/my poker buddies. I ask them to come over and clean out the fridge. Like you, a bowl or two or this and that. Maybe make a salad; heat up this and that. And ... call it dinner. Of course my friends like it ... they don't have to cook, lol.
I think we all have those days.

Now, I haven't never done this; but, it sounds pretty good actually. It is my friends favorite hangover cure ... or these day, a late night dinner.

He grills a hoagie, tops it with spaghetti, then a fried egg and lots of hot sauce. Crazy, but - dooable.
Sounds like something Mario Batali would eat. He has crazy late night snacks, lol.

Happy Monday Everyone!

A busy, but productive weekend; I wish it was longer. Working from home today; so, lots to do - already been up for 3 hrs trying to get some stuff done.

Today's Cooking ...
Lady #1 and #2: Grilled citrus (orange juice, garlic, shallots, thyme, olive oil, white wine vinegar, red pepper flakes) cornish hens (spatchcock); chilled orange wild rice salad (scallions, mandarin oranges, dried cranberries, almonds, champagne vinaigrette); balsamic sauteed green beans

Me: Another grill night. I found a can of kraut in the pantry and 1 of those Eckrich kielbasa links in the freezer (1/2), but that is enough for me. I'll dice up the sausage, add some onions, small red potatoes, stone ground mustard, beer, and caraway seeds; and, add to a foil pouch. Perfect for the grill. On the side, tomato mozzarella salad. They don't exactly go together - but, it just sounds good, and I don't have to go to the store.
