Afternoon Everyone!

Late again. 5am till 1pm work, so just getting back home. No laptop this am.

Love it Sue!! :lol: :lol: :lol: A Ham poem ... go figure.

Dis, I'm like you - I love ham. I have more than 1/2 of a 8 lb ham leftover. I got it for 1.29 lb; so, a great price. I fed me, my son, and friend. Had 2 small sandwiches; and will have leftovers tomorrow and probably Fri or Sat too. Also, freezer stash. Pastas, scalloped spuds, mac and cheese, soups, etc. YUMMY!

Gerry, Turkey soup is always good ... Reminds me that I have a turkey carcass in the freezer.

Me, I planned shrimp patties last night. Then my son was coming over. Then ... back to shrimp patties. And ... never fail ... last minute change to my son.

So ... Guess what is dinner tonight - Shrimp patties. Put it this way; if your 24 yr old son or daughter actually wants to spend time with you (mom or dad); I drop everything. I am happy that he still enjoys that, so dinner changed.

Tonight: Shrimp patties (new recipe), already made; a peach relish (new recipe); I thought of a slaw, but I need to use up some romaine. So, a chopped salad with onion, cucumber, olives and romaine (creamy dressing of some kind); dinner roll from the ABM made yesterday.

I am using up some meatballs that were in the freezer, just heating them up in a bottle of marinara sauce and serving over lower carb veggie penne/ziti. Side salad and whole wheat bread to go with it.

Morning All!

Worked another midnight shift, so I bit late today. Got home not too long ago.

Today's Cooking ...

Ladies #1 and #2: Church Potluck

Me: Taking friends to the airport tonight. I think we are just going to stop at Subway on the way up. There's a nice picnic area/rest area about 1/2 way right on the bay. The breeze is always really nice there; and lots of windsurfers to watch -relaxing. Then, I'll drop them off at the airport. The kids will love it vs a restaurant.

Veggie Sub for me - my favorite.

I did make a batch of chex mix for them to take on the plain. The good kind with M&M's.

I am going to be having carne asada which is marinating right now- it's in the 30's outside now but is supposed to be near 60 and partly sunny around dinnertime so hopefully grilling outside will be ok.
With that I will be having roasted poblano peppers stuffed with yuca (cassava) which is kind of like potatoes. The poblanos will be covered in salsa ranchero which I am making from scratch (not that hard).
Bills wants chiles toreados with some beautifully red fresno chiles I got- they won't be as hot as jalapenos, but since there are a bunch of them, he shouldn't mind. The heat will build up.
I also will be having my Colombian beans which I got done last night- I love when beans sit overnight as they get even better- served over a little bit of rice with some hot salsa and sliced avocado.
So today is spicy, and takes care of my ham bone- which might be the sole reason I buy ham on the bone- I certainly didn't need all the extra ham with just the two of us, but no other way to get the bone. Butchers don't seem to have any around here. I like using the bone so much better than ham hocks. So much less fat.
Recipes and or photos will be appearing off and on as I get them. I hope they are all worthy of post. The beans are already. They will get extra photos later, but the flavor last night was already over the top! I never made that particular dish before and am so glad I thought to try. 8-) It first appeared to be more work than it actually was, making two sauces inside the recipe. One was just simmered for a few minutes, and the other pureed raw, and not that much of an issue, really. But the sauces themselves are interesting, and I think I am going to be using those in other things as well. So overall, it was a learning experience for me about Colombian sauces.

I will be having leftover from the freezer cooked chorizo on a hot dog bun with mustard, horseradish, and grated Triple Aged Gouda cheese and of course an Ale ( Long Trail ) I brought back from VT.

mmm Carne Asada and those beans .. now that sounds yummy!

I had a lot of leftover plain pasta from last night, so I decided to make a baked ziti. I didn't have any marinara left, but i did have a bottle of vodka sauce, so I gave that a try. It was not bad and no complaints from my BF or dd - do you have any idea how rare it is that both of them like the same meal?? Phew.

HF, congrats! They both liked it, lol.

Me, subway was great. Sitting on the bay, beach, windsurfers and kite boarders in the background. A nice breeze. Wine coolers and good to go. Dropped my friends off, and back home. We actually got 5 different subs and split them.

Right NOW, I heated up the jacuzzi, nice and warm, poured myself a drink and it started to rain. That sucks!

Guess back in, and turn the tube on. So much for any plans.
Carne Asada and beans sound really good Sue, the whole meal does.
