I've had 3 days of yummy Mexican food thanks to this event! I'll be posting my completions for Friday soon. These don't count as tags, but Saturday I went to a friends and made my family's Mexican favorites: Chicken Chile Verde Enchiladas http://www.recipezazz.com/recipe/chicke ... orite-2083 and Rice Chile Verde http://www.recipezazz.com/recipe/rice-c ... orite-2082 I also made Strawberry Agua Fresca http://www.recipezazz.com/recipe/strawb ... resca-5939. Today I have my beans simmering in the crockpot and my Horchata sitting, soon I will be starting my chicken and rice tags.

We had a wonderful delicious steak taco and the rest of the guacamole and tortilla chips and some quick pickled onions, loved every mouthful, especially Sue's steak tacos

Sue I am making your Elote - Mexican Corn on the cob and I see that it calls for Cotija Cheese. I know I can't get that here but looking it up I see that it is known as the Parmesan of Mexico so that is what I will sub.

I used the soft variety of cotija which feta cheese would be the best substitute. It's kind of like the two different kinds of goat cheese- soft chevre is crumbly and the harder aged goat cheese is dry like Parmesan or Asiago.Bergy wrote:Sue I am making your Elote - Mexican Corn on the cob and I see that it calls for Cotija Cheese.
