Step by Step Method

Step 1

Combine sugar, cinnamon sticks, 3 lemon slices, and water in a stainless-steel stockpot. Bring to a boil and cook about 5 minutes.

Step 2

Strain the sugar syrup into a bowl and set aside. Discard cinnamon sticks and lemon slices.

Step 3

Add remaining ingredients (except lemon slices) to the same pot and bring to a simmer over medium heat. DO NOT BOIL.

Step 4

Add the sugar syrup and stir.

Step 5

Serve hot in mugs, garnished with lemon slices.

Goodness, gracious, this is a delightful drink! It’s more of a mulled type of wassail and I loved everything about it. Followed as written, except that I let the cinnamon and lemon sit in the simple syrup overnight. This wasn’t planned but ran out of time because I had to leave for an engagement, so followed on with the recipe the next day. I don’t think I’d strain the simple syrup any sooner than overnight, it perfect to say the least. Absolutely wonderful for the Holiday season and bookmarking this one for sure. Thank you, Mikekey, for sharing.
