Step by Step Method

Step 1

Preheat oven to 400° and grease muffin tins or line with paper baking cups.

Step 2

Sift all dry ingredients together into a bowl.

Step 3

Make a well in the center of the mixture.

Step 4

Beat the egg together with the milk and the melted butter. Add the vanilla.

Step 5

Add to the dry ingredients along with the chocolate chips and mix until just moistened.

Step 6

Spoon batter into prepared muffin cups, filling each 2/3 full.

Step 7

Bake until just done, approximately 20 minutes.

Daily Inspiration

Yummy muffins -- a great breakfast or dessert to go with coffee. I had espresso powder on hand so I was anxious to use it in this recipe. These muffins are a quick and easy recipe to make. The addition of the chocolate chips, I'm sure, would make this even better; however, DH is not fond of them. The muffins were still really very yummy and I will definitely make them again.
