Step 1

PreHeat oven to 325 degrees F

Step 2

Peel and dice the eggplant.

Step 3

Shake in brown paper bag in seasoned flour.

Step 4

In a medium size skillet

Step 5

Saute eggplant in the butter, when browned slightly, remove.

Step 6

In same pan

Step 7

Saute onions, do not allow to brown.

Step 8

Place eggplant and onions in a greased Pam sprayed 1 1/2 quart casserole dish.

Step 9

Add tomatoes, oregano, salt and pepper to taste.

Step 10

Mix to blend ingredients.

Step 11

Top with cheese and a sprinkle of nutmeg.

Step 12

Bake 325 degrees F. for 20 minutes, until hot & bubbly.
