Step 1: PreHeat oven to 325 degrees F
Step 2: Peel and dice the eggplant.
Step 3: Shake in brown paper bag in seasoned flour.
Step 4: In a medium size skillet
Step 5: Saute eggplant in the butter, when browned slightly, remove.
Step 6: In same pan
Step 7: Saute onions, do not allow to brown.
Step 8: Place eggplant and onions in a greased Pam sprayed 1 1/2 quart casserole dish.
Step 9: Add tomatoes, oregano, salt and pepper to taste.
Step 10: Mix to blend ingredients.
Step 11: Top with cheese and a sprinkle of nutmeg.
Step 12: Bake 325 degrees F. for 20 minutes, until hot & bubbly.
