Ingredients

The ingredients are:
  • 1 pound eggplant,peeled, diced
  • 1⁄4 cup flour
  • 2 tablespoons butter
  • 1/2 cup onions, chopped
  • 1 can(15 ounces )crushed tomatoes
  • 1⁄2 teaspoon oregano
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon pepper
  • 2 ounces cheddar cheese, grated
  • 1/16 teaspoon nutmeg

How to Make

  • Step 1: PreHeat oven to 325 degrees F

  • Step 2: Peel and dice the eggplant.

  • Step 3: Shake in brown paper bag in seasoned flour.

  • Step 4: In a medium size skillet

  • Step 5: Saute eggplant in the butter, when browned slightly, remove.

  • Step 6: In same pan

  • Step 7: Saute onions, do not allow to brown.

  • Step 8: Place eggplant and onions in a greased Pam sprayed 1 1/2 quart casserole dish.

  • Step 9: Add tomatoes, oregano, salt and pepper to taste.

  • Step 10: Mix to blend ingredients.

  • Step 11: Top with cheese and a sprinkle of nutmeg.

  • Step 12: Bake 325 degrees F. for 20 minutes, until hot & bubbly.
