Supreme Pizza Grilled Cheese Sandwich
"Two of my favorite foods -- pizza and grilled cheese sandwiches -- together. I usually use leftover Italian sausage from spaghetti night (and leftover spaghetti sauce works in place of the pizza sauce, if you happen to have it). Cook time is for the stovetop; add about another 10 minutes or so for using the oven. The oven method lets me make a bunch of sandwiches all at once, which is nice when the kids have company."

Step by Step Method
Step 1
Preheat a skillet over medium heat on the stovetop. Add a drizzle of olive oil and sauté the diced pepperoni, Italian sausage, onion, and green bell pepper until cooked through and slightly caramelized. Remove from heat and set aside.
Stovetop Directions:

Take two slices of bread and spread butter on one side of each slice. Place the bread slices, buttered side down, on a clean surface or plate.

Spread pizza sauce on the non-buttered side of each bread slice.

Layer shredded mozzarella cheese evenly on top of the sauce on each slice.

Add the cooked and sautéed pepperoni, Italian sausage, onion, green bell pepper, and any additional desired pizza toppings on one slice of bread.

Carefully place the other slice of bread on top, ensuring the buttered side is facing up.
Step 7
Preheat a non-stick skillet or griddle over medium heat. Spread a little butter on the outside of each sandwich.

Place the sandwiches, buttered side down, on the skillet or griddle. Cook for about 4-6 minutes, or until the bread is golden brown and crispy.

Carefully flip the sandwiches over using a spatula, and cook for an additional 4-6 minutes, or until the cheese is melted and the bread is toasted.

Once the sandwiches are cooked, remove them from the skillet or griddle. Let them cool for a minute or two before slicing in half. Serve hot.
