Spanish Pilaf for the Instant Pot

"This uses jasmine rice and fideo and the Instant Pot for a fast, easy side dish. If you can't find fideo (it's in my "international foods" aisle), you can use broken up vermicelli or angel hair pasta."

Step by Step Method
Step 1
Rinse the jasmine rice under cold water until the water runs clear. Drain and set aside.
Step 2
Turn on the Instant Pot and select the sauté function. Heat the olive oil in the pot.
Step 3
Add the fideo pasta to the pot and sauté for 2-3 minutes until it turns golden brown, stirring frequently. Remove the toasted fideo pasta from the pot and set it aside.
Step 4
In the same pot, add the chopped onion, bell pepper, and minced garlic. Sauté for 2-3 minutes until they become tender.
Step 5
Add the diced tomatoes (with their juices) to the pot and cook for another 2 minutes.
Step 6
Add the jasmine rice, toasted fideo pasta, chicken or vegetable broth, cumin powder, paprika, chili powder (if using), and season with salt and pepper. Stir well to combine all the ingredients.
Step 7
Close the Instant Pot lid and set the valve to the sealing position.
Step 8
Select the manual/pressure cook function and set the timer for 4 minutes on high pressure.
Step 9
Once the cooking time is complete, allow a natural pressure release for 5 minutes, and then do a quick release for the remaining pressure.
Step 10
Carefully open the lid and fluff the rice with a fork. Let it sit for a couple of minutes.
Step 11
Garnished with fresh cilantro or parsley, if desired.
