"This is the only way to cook and serve chili. I have been collecting and making chili recipes for more years then I want to admit. This is my recipe. I suggest using the options provided for the best result and flavor. Don't be fooled it is not to hot to handle. Cooking the full 6 hours increases the flavor. Flavor gets better over a few days.."

Step 8

Now add the other herbs, spices and tomatoes.

Step 9

Cook slowly for 3 to 6 hours

Step 10

Add liquid as needed to just keep from burning but add as little as possible.

Step 11

When cooked serve in a bowl over beans prepared as follows: Pick over the beans** and discard any bad ones. Soak the beans in water over night or quick soak by covering the beans with water and bringing to a boil. Boil 1 minute, cover and let sit for 1 hour. Drain off the water and cover with fresh water. Add 1 tsp. of baking soda.

Step 12

Add salt pork or bacon and oregano. Simmer over medium heat for 3 to 4 hours or until tender.

Step 13

Add water as water boils away.

Step 14

Drain and serve the chilli over the beans.

Step 15

**I prefer pinto beans in this recipe.
