Step by Step Method

Step 1

Preheat oven to 350F.

Step 2

Par boil eggplant in heavily salted boiling water, drain and mash.

Step 3

Add corned beef and onions, season lightly to taste.

Step 4

Add bread and egg and mix.

Step 5

Put in Pam sprayed buttered 9x9 casserole.

Step 6

Mix bread crumbs with butter and top the casserole.

Step 7

Sprinkle on cheese (can use Italian blend).

Step 8

Bake for 30 minutes or until lightly browned.
