Step 1: Preheat oven to 350F.
Step 2: Par boil eggplant in heavily salted boiling water, drain and mash.
Step 3: Add corned beef and onions, season lightly to taste.
Step 4: Add bread and egg and mix.
Step 5: Put in Pam sprayed buttered 9x9 casserole.
Step 6: Mix bread crumbs with butter and top the casserole.
Step 7: Sprinkle on cheese (can use Italian blend).
Step 8: Bake for 30 minutes or until lightly browned.
