Ingredients

The ingredients are:
  • 1 eggplant, peeled
  • 6 cups water, boiling
  • 1/2 teaspoon salt
  • 6 ounces white bread (6 slices)
  • 12 ounces corned beef (1 can)
  • 1 cup onion, diced
  • 1 egg
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • Topping
  • 1/4 cup bread crumbs
  • 2 tablespoons butter, melted
  • 4 ounces mozzarella cheese, shredded

How to Make

  • Step 1: Preheat oven to 350F.

  • Step 2: Par boil eggplant in heavily salted boiling water, drain and mash.

  • Step 3: Add corned beef and onions, season lightly to taste.

  • Step 4: Add bread and egg and mix.

  • Step 5: Put in Pam sprayed buttered 9x9 casserole.

  • Step 6: Mix bread crumbs with butter and top the casserole.

  • Step 7: Sprinkle on cheese (can use Italian blend).

  • Step 8: Bake for 30 minutes or until lightly browned.
