Step 1

Grease 2 baking sheets.

Step 2

Crush cornflakes finely and combine with the flour. Cream the butter and the sugar together until light and fluffy, then beat in the egg; Add in the orange rind, coconut, raisins and cherries & combine with the dry ingredients.

Step 3

Place heaped teaspoons of the mixture onto the greased baking sheets and bake at 180dg C (350F) for 10- 15 minutes. (Checking to make sure they are lightly browned but not burning).

Step 4

Cool before serving or storing.
