Step by Step Method

Peel, slice a medium eggplant.
Step 2
Cook (boil/steam?) eggplant until it mashes easily.

Pour into a buttered Pam sprayed 1-quart baking dish about 1 1/2 inches deep.

Bake at 350 degrees from 20 to 30 minutes or longer if needed.
