Step 1: Peel, slice a medium eggplant.
Step 2: Cook (boil/steam?) eggplant until it mashes easily.
Step 3: Season to taste with salt and pepper.
Step 4: Add other ingredients.
Step 5: It will have a pudding-like texture.
Step 6: Pour into a buttered Pam sprayed 1-quart baking dish about 1 1/2 inches deep.
Step 7: Bake at 350 degrees from 20 to 30 minutes or longer if needed.
Step 8: Bake until it is set like a custard, but not dry and stiff.
