"First Lady's (Roselynn Carter) recipe was posted in a magazine years ago. "Eggplant lends itself to casseroles as it becomes soft and take up flavors easily." This is a mild casserole. Feel free to add Italian herbs to taste. This is from old Georgia, they liked milder flavors lol. Can also use Swiss, but Jimmy Carter was allergic to Swiss cheese his favorite was rat trap cheddar cheese ( swiss is what some recipes use, she probably changed the cheese up to give variety). Gruyere or vegan cheese may be used. Use margarine instead of butter if going vegan and GF breadcrumbs for gluten free diet. Mrs Carter is very health conscious. Serve with pasta or spaghetti squash."

Step by Step Method

Step 1

The eggplant slices: cut about 1 inch thick circumference, trim so they are all approximately the same size.

Step 2

Place in oiled shallow Pyrex dish.

Step 3

Sprinkle with salt and pepper to taste.

Step 4

Broil 5 minutes or longer to make fork-tender.

Step 5

Heat the oil and butter in a skillet; add onion and cook until translucent.

Step 6

Add garlic, tomatoes and trimmings of eggplant; cook until thick.

Step 7

Stir in seasonings, parsley and bread crumbs.

Step 8

Spread evenly on top of the broiled eggplant.

Step 9

Cover with grated cheese.

Step 10

Bake at 350 degrees until cheese is melted, about 15 minutes.
