Ingredients

The ingredients are:
  • 1 eggplant, peeled, cut into 8 circles, (large)
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 tablespoons oil
  • 3 tablespoons butter
  • 1 cup onion, chopped
  • 2 garlic cloves, minced
  • 2 cups tomatoes, peeled, seeded, chopped
  • 1/4 teaspoon thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup parsley, chopped
  • 1/2 cup white breadcrumbs
  • 8 ounces mozzarella cheese, grated

How to Make

  • Step 1: The eggplant slices: cut about 1 inch thick circumference, trim so they are all approximately the same size.

  • Step 2: Place in oiled shallow Pyrex dish.

  • Step 3: Sprinkle with salt and pepper to taste.

  • Step 4: Broil 5 minutes or longer to make fork-tender.

  • Step 5: Heat the oil and butter in a skillet; add onion and cook until translucent.

  • Step 6: Add garlic, tomatoes and trimmings of eggplant; cook until thick.

  • Step 7: Stir in seasonings, parsley and bread crumbs.

  • Step 8: Spread evenly on top of the broiled eggplant.

  • Step 9: Cover with grated cheese.

  • Step 10: Bake at 350 degrees until cheese is melted, about 15 minutes.
