Step 1: The eggplant slices: cut about 1 inch thick circumference, trim so they are all approximately the same size.
Step 2: Place in oiled shallow Pyrex dish.
Step 3: Sprinkle with salt and pepper to taste.
Step 4: Broil 5 minutes or longer to make fork-tender.
Step 5: Heat the oil and butter in a skillet; add onion and cook until translucent.
Step 6: Add garlic, tomatoes and trimmings of eggplant; cook until thick.
Step 7: Stir in seasonings, parsley and bread crumbs.
Step 8: Spread evenly on top of the broiled eggplant.
Step 9: Cover with grated cheese.
Step 10: Bake at 350 degrees until cheese is melted, about 15 minutes.
