Step by Step Method
Step 1
In a bowl of a stand mixer (kitchen-aid) combine 1 1/4 cups flour, olive oil, yeast and salt. Add the hot water. Attach the bowl to the mixer and fit with the paddle attachment. Mix on low speed until the batter is elastic (3-5 minutes). Add enough of the remixing flour to make a dough that clean the sides of the bowl. Remove the paddle attachment and attach the dough hook. Knead on medium speed until the dough is smooth and supple (3-5 minutes).
Step 2
Shape the dough into a ball and transfer to a large bowl and cover with a damp towel. Let stand in a warm draft-free place until the dough doubles in volume (30 minutes).
Step 3
Cut the dough in half and shape each half into a ball. Use immediately.
Step 4
To make your pizza. Roll each ball into a circle, making it as thick as desired. We use round pizza pans. Put pizza dough in each of two pans, add your sauce and what topping you like -- ours is just mozzarella (shredded) and garlic. Bake at 450 degrees F for 10 minutes or until light brown and cheese melts.
