Pat's Bread
"Sweet yeast bread or dinner rolls. This recipe was given to me by a dear friend sometime in the early 1980s. It was her mother's recipe for yeast bread and still one of my favorite bread recipes. I apologize in advance for the less than scientific instructions. This is one of those recipes where the weather makes a HUGE difference. A cool day slows the rise. A warm humid day speeds it up."

Step by Step Method
Step 1
Mix together first six ingredients with an electric mixer.
Step 2
Add 5 cups flour, 1 cup at a time. You may switch to a dough hook and continue using the electric mixer. Alternately remove dough from mixing bowl when it is too heavy for your mixer. Continue to add remaining flour by hand. Knead well 5 minutes.
Step 3
Place dough in a large, well oiled bowl. Let rise until doubled. Time is going to depend on the room temp and humidity. 2-4 hours approximately.
Step 4
Punch down. Shape into loaves or rolls. Let rise until double.
Step 5
Bake at 325 for 20-25 minutes for small loaves. Top will be golden and loaf will sound hollow.
