Step by Step Method

Step 1

Cook pasta in boiling water until tender; drain; reserving one cup of cooking liquid. Transfer to a large serving bowl.

Step 2

Meanwhile saute the bacon in a skillet over high heat until crisp (5 minutes). Using a slotted spoon transfer bacon to paper towels.

Step 3

Add shallots to skillet and saute over medium high heat until golden brown (5 minutes). Stir in snap peas ; stirring until crisp tender (1 minute or so); add spinach and frozen peas; stirring until spinach wilts (1 minute or so).

Step 4

Add pea mixture, bacon, mint and enough cooking liquid to moisten pasta.

Step 5

Stir in cheese.

This pasta is a delightful light change of pace. Love all the "green". Used fusilli bucati corti (smaller than regular fusilli), sugar snap peas (cut into pieces) and cut up ham for the bacon. And added a splash of lemon juice and a good grinding of pepper to brighten the flavours. We loved this! And it will see repeats for sure. Thank you for sharing Ellie! Made for Billboard Recipe Tag.
