"This is a healthier way to make fried eggplant. I think it tastes as good as the "old fried" way. Use these to make Italian Eggplant or any other recipe that calls for them. Makes great Eggplant Grinders or just to pick up and eat with your fingers with a little salt."

Step by Step Method

Step 1

Spray a cookie sheet generously with cooking spray.

Step 2

Mix the bread crumbs, parmesan cheese, basil, and garlic salt together.

Step 3

Peel eggplant and slice about 1/4" thick; dip in beaten egg white and then into the crumb mixture.

Step 4

Put on baking sheet and bake in a 400 degree oven for about 12-15 minutes or till done; turn once if you like.

Delicious! The eggplant was easy to prepare and made a very good Eggplant Parmesan. Italian bread and a simple salad was all we needed with it.

Mimi this a very special recipe - If anyone has not tried eggplant try this recipe it is so tasty. Because I am watching carbs a bit I only dipped the eggplant on one side in the egg and crumbs and it was still so cruchy and good - This is a recipe that I will do angain and again.
