Step by Step Method

Step 1

Bring the water, tea, sugar and spices to a gentle boil. Depending on preference and strength required determine the time for which you boil the tea.

Step 2

It is preferred to boil it for about 5-10 minutes. If you are looking for a milder tea you can add the tea after the first boil.

Step 3

Add milk and boil for another 5 minutes. Strain and serve hot with Indian biscuits or biscotti.

NOTE: Some people prefer way more milky tea than what is presented in this recipe. They use equal proportions of water and milk. Some even use more milk than water. More milk leads to milder tea so the choice is yours.

I used an Assam tea from Market Spice in Seattle. I like a little more anise flavor, so used 2 petals of star anise. The flavors were perfect and this is very easy to make. Skipped the rose petals. Made for Cooking on a Dime game.

This will be my new go-to recipe for Indian chai. Over the last seven years, we have travelled extensively in India, and I know my chai. This is the closest I've come to an authentic recipe. Way, way better than the recipe I learned in Delhi. Thanks so much for posting. Made for one (hubby is not a tea drinker) using a tea bag because no appropriate loose tea was on hand. Followed everything else.
