Step by Step Method
Step 1
Line a plate with paper towels and set near cook top.
Step 2
In a large heavy-bottomed pot, heat the oil over medium heat until oil reaches 350º.
Step 3
Carefully add the pecans and cool until color deepens, 2-3 minutes.
Step 4
Using a slotted spoon, transfer to a large bowl.
Step 5
While nuts are still hot, add the butter and cayenne and stir to combine
Step 6
Season with salt & pepper, then transfer to prepared plate to drain.
Step 7
Make ahead: Once cooled, store in airtight container in refrigerator for up to 2 weeks. Bring to room temp before serving.
