"I made these for Easter eggs several years ago with my cooking and recipes group, and they are unbelievably yummy! Try making them with the kids, or for your kids, grandchildren, or families Easter Baskets, or for friends and co-workers. They will love you forever :) You can also roll them into balls, and make Butter Cream Balls for your Christmas trays or for Halloween and Valentines Day. Step by Step Method

Step 1

Mix the butter and cream cheese together. (I put in the microwave for 30-45 secs. to soften).

Step 2

Add the confectionary sugar about 1 cup at a time, along with vanilla, and mix well. (I use my hands).

Step 3

Place the mixture in the freezer to chill for at least 20 minutes (You want it firm, but not frozen, so check it from time to time).

Step 4

Form the mixture into egg shapes with your hands. (It is helpful to put some confectionary sugar on your hands so the eggs don't stick to them).

Step 5

When you are done making the eggs, put them in freezer again for at least 25 minutes.

Step 6

Melt the chocolate and shortening in a double boiler.

Step 7

Dip the bottom of the egg into the chocolate, then place it on a small flat dish. Take a spoon, and spoon some melted chocolate on top, spreading around with a butter knife. (Make sure you don't get it on too thick, or you won't have enough for the whole batch).

Step 8

Arrange the chocolate coated eggs on an aluminum foil paper lined tray.

Step 9

When done making eggs, put in the freezer for a few minutes to harden eggs.

Step 10

Place each egg or ball in a colored paper cupcake cup.

Step 11

Store in the refrigerator, covered with aluminum foil.

My family was so surprised to get Easter baskets from me this year, but I saw these Easter candy recipes and had to make them for everyone special to me. These are great and easy to work with. I used wax instead of the the shortening. It made them easy to dip and gave them a shine. I made half a recipe of these and made large Easter eggs and then piped a beautiful flower on each one. Remember those huge eggs we used to get in a box when we were little? These taste just like those with their creamy butter filling!

I made a half batch of these because I was making 2 other kinds of eggs and didn't want too many. I made these to go into my grandchildren's Easter baskets and when they saw them they danced around the kitchen table. These are a definite do again next year!

If you love buttercream Easter eggs here's the ticket to the best around. I made up a small batch of these to see how they tasted before the holidays so I can include them in my Easter baskets. They came out extremely well. My kids have real sweet tooths so they will like these too!

I made up some of these to go in the Easter basket for our family get together at my aunt's house on Easter. I wanted to make a variety so everyone can find something they like. They are going to love these creamy eggs dipped in chocolate as much as I do!
