Step by Step Method

Step 1

In a bowl mix together the brown sugar and kosher salt in water until thoroughly mixed (no granules should remain in the water). Add in peppercorns and garlic slices.

Step 2

Pour the mixture over chicken pieces or whole chicken (for a whole chicken place breast-side down, then turn breast side up half way through brining time) Soak the meat for 8-24 hours (24 hours is even better).

Step 3

Wash meat thoroughly under cold water before cooking.

I baked a chicken and used this brine before baking. What a difference in the juices in the chicken using this brine. It was so moist that the juices just dripped off the meat! It added to the flavor too, which was an added bonus for us since I didn't add anything to the chicken when I got ready to bake.
