Step by Step Method

Step 1

Put filets on a plate and place in freezer for 20-30 minutes.

Step 2

Preheat skillet to very hot (cast-iron is preferred, or stainless steel. It is not recommended for non-stick skillets to heat to very hot). Remove filets from freezer, brush with oil and season with salt and pepper. Sear each side in hot skillet 5 minutes on each side. Remove from skillet and place on a clean plate.

Step 3

Preheat oven to 450 degrees F.

Step 4

For mushroom filling: melt butter in medium heated skillet (same one you seared the filets in), saute mushrooms and onions. Lightly salt and pepper. Cook 5 minutes. Stir in bread crumbs.

Step 5

Lay out puff pastry sheet on lightly floured surface and lightly flour the top. Roll out to 9" X 10". Cut in half longways.

Step 6

Spoon half of the mushroom mixture on each of the filets. Press down to compact mushroom mixture. Carefully place filets on top of each puff pastry sheet, mushroom filling side down. Fold each long side of the puff pastry over the filets, then each end. Place on baking sheet that has been lined with parchment paper, seam-side down. Brush with beaten egg white all around.

Step 7

Bake at 450 degrees F for: Rare- 10 minutes Medium Rare - 12 minutes Medium - 15 minutes

I picked this recipe in part because I really don't know how big the cut of meat is supposed to be for beef Wellington. This seemed forgiving. My cuts of meat were really small. Plus I have no counter for rolling; I used my chopping board. This was great. I used the same oven temperature. I kept them in 10 minutes. I took the littlest one and it is done all the way. My husband is working late. He is getting the larger one, but it might not even have pink in it, this meat was so small. This is a keeper and I'll save it for the next time my boat comes in and I get a good cut of meat. Thanks! I tagged this in Alphabet Soup 2020 tag game in the forums.
