Step by Step Method

Step 1

Heat butter in a heavy pan over medium heat .Add onions and saute until soft, about 3-4 minutes. add carrots sand saute 3-4 minutes longer until onions are golden.

Step 2

Add tomatoes, water, bouillon cubes,( or broth honey)- or sugar , salt and pepper.

Step 3

Stir ,increase heat and bring to a simmer cover then lowed heat to low , to a simmer .Simmer 10 to 15minutesuntil tomatoes have broken down and carrots are tender.

Step 4

Using an immersion blender ,blend the soup adding the basil.

Step 5

Stir in cream ,adjust salt and cayenne.

Step 6

Whisk in sour cream if you like.

A delicious creamy homemade tomato soup with old fashioned goodness. I used both the carrots and the red bell pepper as well as the optional celery. Served with homemade crusty rolls making for a great lunch. It's a keeper!

When I read your new recipe, I knew I had to make it. And so happy I did! This soup is absolutely delicious! It is a lovely change of pace. Love the addition of the carrots, they lend a lovely sweetness to the soup. I used the options...canned tomatoes, chicken broth and dried basil. Looking forward to making with the fresh options. I did puree to a rustic point which left some chewing to be done. Thank you so much Dot for posting this keeper/repeater recipe!
