Step 1: Heat butter in a heavy pan over medium heat .Add onions and saute until soft, about 3-4 minutes. add carrots sand saute 3-4 minutes longer until onions are golden.
Step 2: Add tomatoes, water, bouillon cubes,( or broth honey)- or sugar , salt and pepper.
Step 3: Stir ,increase heat and bring to a simmer cover then lowed heat to low , to a simmer .Simmer 10 to 15minutesuntil tomatoes have broken down and carrots are tender.
Step 4: Using an immersion blender ,blend the soup adding the basil.
Step 5: Stir in cream ,adjust salt and cayenne.
Step 6: Whisk in sour cream if you like.
