  • The following recipe serves 5 cups people.

Ingredients

The ingredients are:
  • 4 tablespoons ghee ,butter or olive oil.
  • 1 extra large onion diced.
  • 1 cup carrots thinly sliced( or.one red bell pepper sliced }. I like to use both.
  • 2 pounds fresh tomatoes or one 28oz can of diced tomatoes., (San Marzano are good.)
  • 1 cup water plus 1-2 bouillon cubes chicken or veggie, broth works well also.
  • 2 tablespoons honey or sugar.
  • 1 teaspoon salt , to taste.
  • 1/2 teaspoon pepper.
  • 10 basil leaves, or some dried basil
  • Pinch of cayenne.
  • 1/2heavy cream or half and half
  • 1 to 2 tablespoons sour cream
  • Optional and or add celery or garlic

How to Make

  • Step 1: Heat butter in a heavy pan over medium heat .Add onions and saute until soft, about 3-4 minutes. add carrots sand saute 3-4 minutes longer until onions are golden.

  • Step 2: Add tomatoes, water, bouillon cubes,( or broth honey)- or sugar , salt and pepper.

  • Step 3: Stir ,increase heat and bring to a simmer cover then lowed heat to low , to a simmer .Simmer 10 to 15minutesuntil tomatoes have broken down and carrots are tender.

  • Step 4: Using an immersion blender ,blend the soup adding the basil.

  • Step 5: Stir in cream ,adjust salt and cayenne.

  • Step 6: Whisk in sour cream if you like.
