Golden Tile Fish
"My husband caught a large Golden Tile Fish . Golden Tile is the best tasting fish ! It actually tastes like lobster! Be careful to remove or cut out all of the bones ( they are located in the center , near the blood-line). I use Gator Sprinkle brand All Purpose seasoning ( available on amazon). Let the dipped and breaded fillets sit at least 10 minutes so that the breading sets; panko has a tendency to come off the fish if you skip this step. Fry in Peanut oil if possible; it has a very high smoke point and has no flavor. And use an instant read thermometer to determine oil temp and fish doneness."

Step by Step Method
Step 1
Mix the flour , panko and seasonings - set aside in a shallow dish.
Step 2
Place the beaten eggs in another dish.
Step 3
Dip the fillets into the flour/panko mix, then dip in egg, then dip into the flour/panko again; Set the prepared fillets aside and let them sit for at least 10 minutes.
Step 4
In a large cast iron dutch oven, heat the oil until it reaches 350F.
Step 5
Deep fry the fillets until golden brown and the inside temp reaches 145-150.
Step 6
Drain on paper towels.
