Step 1: Mix the flour , panko and seasonings - set aside in a shallow dish.
Step 2: Place the beaten eggs in another dish.
Step 3: Dip the fillets into the flour/panko mix, then dip in egg, then dip into the flour/panko again; Set the prepared fillets aside and let them sit for at least 10 minutes.
Step 4: In a large cast iron dutch oven, heat the oil until it reaches 350F.
Step 5: Deep fry the fillets until golden brown and the inside temp reaches 145-150.
Step 6: Drain on paper towels.
