Step by Step Method

Step 1

Combine sugar, salt, cinnamon and water in a small pot.

Step 2

Cook over low heat until it reaches the soft ball stage, 235 F-degrees with candy thermometer. This takes awhile, and the estimated cook time of 20-30 min could be less or more, depending on how you and your stovetop interpret "low heat". You can just occasionally stir until it really gets thick, but don't leave it unattended. When it thickens,you must stir constantly, wooden spoon is best.

Step 3

Remove from heat, add vanilla and then the pecans. Stir gently so you don't break pecans, but quickly to evenly coat. There isn't much time, so I like to have waxed paper already spread on the counter top, awaiting the pecans.

Step 4

Dump pecans on waxed paper and quickly spread out before they harden too much. Let them cool, if you can possibly resist. Store in airtight container or baggies.
