"This recipe was copied from a seasonal magazine from the LCBO. I usually get the butcher I buy my turkey from the remove the back bone and breast bone. I then flatten it by pressing down on the breast. The recipe also included that if you want stuffing, either bake it separately or place it in the baking pan and put turkey on top."

Step by Step Method
Step 1
Preheat oven to 400 Fahrenheit.
Step 2
Combine butter, paprika, garlic, tarragon, chives, parsley, salt and pepper and mix together.
Step 3
Using a teaspoon or your fingers, make a space between the skin and meat of the turkey and spread seasoned butter underneath the skin and over the legs.
Step 4
Place turkey on a large rimmed baking sheet, folding the legs in towards each other to protect the breast from overcooking. Turn wing tips under wing and rub with a little extra butter.
Step 5
Sprinkle turkey with salt and pepper, and bake for 1 hour 50 min to 2 hours, basting occasionally, or until an oven thermometer reads 165 Fahrenheight at the thickest part (where legs meet the breast). Remove turkey from oven and let rest for 10 mins.
