Flaky Freezer Biscuits

Step by Step Method
Step 1
In a small bowl proof the yeast with 1 tablespoon sugar in 1/4 cup warm water. Set aside for 8-10 minutes or until foamy.
Step 2
In a large bowl combine flour, 1/4 cup sugar, baking powder, baking soda and salt. Cut in cold butter to forum a crumbly mixture. Stir in yeast mixture and buttermilk; mix just enough to hold together.
Step 3
Roll out dough into 1 to 1 1/4-inch thickness on a floured surface. Allow to sit for 6-7 minutes.
Step 4
Cut out biscuits with the top of a glass or biscuit cutter. Prick tops with a fork. Bake as many as desired right away and freeze the rest.
Step 5
To freeze; freeze separatly on a cookie sheet. When biscuit dough is frozen wrap in plastic wrap then in foil.
Step 6
When ready to bake; remove as many frozen biscuit dough from the freezer as needed. Thaw completely on a lightly greased baking sheet then allow to rise until doubled in size (this should take about about 30-40 minutes after the biscuits are thawed). Bake in a preheated 425 degree oven for 15-17 minutes.
