Step 1

Place beet wedges in a glass measuring cup or bowl (4 cup) and add 2 cups of broth; cover with paper plate and microwave on high for 15 minutes or until tender.

Step 2

In a large saucepan or pot over medium heat heat the oil; add onion and celery; cover and cook for 10-15 minutes or until translucent.

Step 3

Add beet mixture and 1 cup broth to onion mixture; cover and simmer 3-5 minutes. Stir in ginger and five-spice powder. Using an immersion blender puree soup. Season to taste with salt and pepper and if needed additional five-spice powder.

Step 4

Ladle soup into bowls and top with dollops of sour cream and sliced celery leaves.

This was an interesting meal. I am glad I tried it. I did as the other reviewer and cooked it on the stove top. It took a while for the beets to cook, and I too used more vegetable broth than the recipe stated. I opted to use more ginger than it called for, and I think the extra zing added to the flavor. I used plain yogurt for the topping. It was good when mixed in. I used my hand blender to mix the beets. A good way to use up beets.

Love the flavours in this soup! A couple of things I encountered making this. I weighed the beets and put into the 4 cup measure as stated with the 2 cups of broth in the microwave for the alloted time. It boiled over before beets were done. So put into a pot on the stove to finish cooking. When I pureed the soup it was way too thick after adding the last cup of broth. So needed to add more broth. Did not puree right down, left it a wee bit rustic. Did add more 5 spice and ginger (personal preference). Will be making this again. Thanks for sharing Ellie! Made for Billboard Recipe Tag.
