Step by Step Method

Step 1

Preheat the oven to 450 degrees and coat a donut pan liberally with cooking spray.

Step 2

Stir together flour, cocoa powder, sugar, baking powder and salt in a large bowl. Add the egg, vanilla, and milk and stir together for 1 minute. Add the oil and continue to whisk until just combined. Transfer the batter to a large measuring cup (or a bowl with a spout) for easy pouring.

Step 3

Fill each cavity in the pan 2/3 of the way full with batter. Bake for 7 to 9 minutes or until the donuts spring back when lightly touched. Cool completely before icing. Yields 10 to 12 donuts. To make the glaze: combine the chocolate chips, butter, corn syrup and vanilla extract in a double boiler (or in a stainless steel or glass bowl over some simmering water). Stir until the chocolate is melted and everything is incorporated. Use immediately.

Very nice soft chocolate cake. I saw these up for grabs in the Billboard recipe tag game and had to grab them. I've had a donut pan for a couple of years and never used it. I used half Splenda/half sugar and buttermilk. I filled the 6 inserts in my pan 3/4 full which used up all of the batter. The donuts looked very nice until I tried to tip them out of the pan...then they crumbled into pieces. It may have been due to my substitutions. It was a very soft delicious cake, but not even cake donut like...more like a hostess cupcake which makes me think they may work better as cupcakes. I didn't want to waste such a delicious cake, so made a trifle with the cake crumbs...layering Better Bowls sugar-free vanilla pudding between the layers and I topped it with the delicious chocolate glaze...Very Yummy...kinda like a Ding Dong. Hubby loved it too.
