Step by Step Method

Step 1

Add the olive oil to a medium-sized saute pan or cast-iron pan over medium heat and let it get hot. Add the red onion and saute for 30 seconds. Add the green chiles and mushrooms and saute until the mushrooms are fully cooked, about 2 minutes.

Step 2

Meanwhile, in a mixing bowl, combine the eggs and remaining ingredients (cream - black pepper). Whisk it well until it is frothy and light.

Step 3

Add the egg mixture to the pan and turn the heat to low. You can continue to cook on the stove top, covered, or transfer to 350-degrees F (180-degrees , or gas mark 4) oven for 20 minutes.

Step 4

Serve hot with some toasted buttered bread.
