Step by Step Method
Step 1
Place 1 tablespoon olive oil in skillet. Heat on medium heat. Place chicken chunks in heated oil and season with Southwestern seasoning and dried Italian seasoning. Brown on all sides.
Step 2
Add onions and cook till translucent. Add a little more olive oil if needed. Add garlic and cook an additional 30 seconds.
Step 3
Begin to heat water for pasta and add when it's boiling. Cook according to directions.
Step 4
To chicken mixture, add lemon juice, chicken broth, honey, most of the chopped basil and walnuts (save some of the basil and walnuts for garnish), and additional 1/3 cup olive oil. Let simmer on low while the pasta cooks.
Step 5
When pasta is cooked, add the lemon zest to the chicken mixture and stir in.
Step 6
Drain pasta (reserving about 1 cup of water to mix with the pasta if it's too dry) and mix with chicken mixture.
Step 7
Plate and sprinkle reserved basil and walnuts, and top with goat cheese crumbles.
