"Bruschetta is a universal favorite of most cooks for an appy or as a starter course, primarily for its flavor varieties & its easy fast-fix. That's exactly was realsimpledotcom does. It opens your eyes to all things easy & fast-fix. I decided to enter 2 of their bruschetta recipes as a combo because they were my 2 faves from a RS article touting new recipes for bruschetta. NOTES FROM ME: 1 of the recipes was amended by me to suit our preferences & the serving suggestions were entirely my own. Times shown were 5 min prep for each recipe, so I entered the total of 10 min for the combo. Each recipe also showed as 4-6 servings, so I will leave it to you to reduce or expand the recipes as desired. You may also find that you strongly prefer 1 recipe over the other. Step by Step Method

Step 1

FOR Blue Cheese & Honey Bruschetta - Thinly slice the baguette. Place the rounds on a baking sheet & broil until golden brown (about 1 1/2 min per side). Divide the blue cheese among the toasted bread slices. Drizzle 2 tbsp honey evenly over them.

Step 2

FOR Walnut & Parmesan Bruschetta - Thinly slice the baguette. Place the rounds on a baking sheet & broil them until they're golden brown (about 1 1/2 min per side). Pulse the walnuts & Parmesan in a food proc until crumbly. Add the lemon juice. While the machine is running, add the oil in a slow, steady stream. Taste & add salt or garlic as desired. Spread the mixture on the rounds.

Step 3

Serving Suggestions: Serve the bruschetta as parts of an appy assortment -- OR -- Serve as a combo starter course w/avocado wedges or a sml serving of fruit like grapes, a melon slice or strawberries.

Tips


  • A standard kitchen blender, food processor or hand-held stick blender is required for the Walnut/Parmesan version.
