What WAS on your Plate & WHAT'S for Dinner Tonight 2/24

HAPPY HAPPY HUMP DAY EVERYONE!!

Boy, I would like to know what happened to Mon and Tues. I'm on a no cooking streak ... not by choice. Tonight, I am meeting a catering client I cook for now and then. He has an upcoming party. We are meeting before his business/dinner party; however, he did order me a plate to take with me for dinner. Lamb something, I LOVE lamb. So, no cooking.

FYI, our subs from Subway last night; actually really good!

There's a member looking for tuna recipes here I have lots of canned tuna in my pantry, so I'm thinking something with canned tuna for tonight

Taco casserole tonight

2 ounces Tortilla Chips (about 24), plus additional for serving
1 Tbs Chili Oil (or olive oil and red pepper flakes)
1 Onion, chopped
2 cloves Garlic, minced
1 pound Ground Chicken
2 Tbs Taco Seasoning
1 can Black Beans, drained
1 cup Hot Salsa
1 cup shredded Reduced Fat Cheddar Cheese
Optional: Other toppings such as jalepenios, olives, etc.

Directions

1 Heat oven to 350.

2 Heat oil in a large skillet. Add the onion and garlic and sautee until soft. Add meat and taco seasoning. Cook, breaking up meat with a spatula, for about 5 minutes. Add beans and salsa. Mix well and continue to cook until salsa thickens.

3 Line the bottom of a large baking dish with tortilla chips, pressing down on them lightly to break them into bite-sized pieces. Spread the meat and bean mixture over the chips and top with cheese. Add sliced jalepenos or other toppings that you ant to be cooked. Bake for 20 minutes or until cheese is melted and gooey.

4 Scoop up with additional chips if desired.

He got quite a few replies from Italian, Greek, Pies, sandwiches, etc.
I always have tuna in my pantry.

Catz ... Mexican is another standby at my house. Tortillas, beans, etc are always on my shelf. Sounds good. Of course I would have to have an avocado and sour cream, lol.
