I usually try to have a vegetarian meal when the DH is on night shift as he insists on meat of some sorts with his meals. I especially like pastas and pizza meals.

Seafood is another favourite for me as the DH has developed an intolerance and as much as he loves it will only eat about two or three times a month leaving at least 7 to 10 days between serves. His dad is worse and will only have it every 4 to 6 weeks and enjoy when he can, even hard for him in that they live in seafood town and it the seafood overall is quite cheap and oh so fresh - when we were over there a couple of years ago for the in-laws 60th wedding anniversary I was eating seafood at least twice a day and sometimes three times in one day.

I love seafood too...this morning I made up a smoked salmon cheese ball and will share with a couple of families. I can't get enough fish/seafood these days. But love when I can have plant protein too!
