This one goes into the luxury basket but well worth it as fresh local scallops here fetch a premium of $80 per kilo so the 18 scallops I had cost $16.00 and worth every cent, so to keep costs down I will use raw Queensland banana prawns which usually sell for about $20 to $23 per kilo and they have really nice texture when cooked very similar to when you use raw crayfish flesh in a dish.
