Today I'm making my herb roasted chicken breast but with olive oil instead of butter (for hubby's heart), fresh corn, and leftover carrots and rice.

Got a new recipe in the crockpot for a shredded green chili beef - part will be served with mashed potatoes tonight, leftovers later this week for soft tacos.

Last night I made oven fried catfish (not so good), corn on the cob, leftover rice and a garden salad.
Tonight I'm making breakfast for supper.

Last night was breakfast for supper. Tonight was leftover shredded beef from Sunday made over as soft tacos and Mexican rice.
